Any tips for insulating the garage ? with VF inside during winter …

It kind of depends on what the garage is made of. My workshop is steel cladding on a steel frame, I filled the space back to the purlins with semi-rigid insulation sheets and boarded over it. Seems to work fine. Same could work for wooden structures, but if it’s concrete, it’ll get all sorts of condensation inside no matter what you do without heating it.
